Ethiopia is the largest coffee producer in Africa and provides a unbelievable wide range of high quality coffee. Each region’s beans having very distinctive characteristics, making some of these the most sought after in the specialty coffee world. Key producing regions include Yirgacheffe / Sidamo, Harar, Limu, Djimmah, Lekempti and Bebeka.
Yirgacheffe (or Yirga Cheffe) is located in the Gedeo Zone in Southern Ethiopia and is both a town and grade of coffee in Ethiopia. Coffee from the area of Yirgacheffe is often referred to as “garden coffee“ or “forest coffee” as it is grown on small plots, often in the back yard or forests of small dwellings. Most of the coffee grown in Ethiopia is cultivated at over 2,000m asl and the farmers using traditional methods i.e. under shade trees alongside other crops and without the use of chemicals. Processing in Yirgacheffe can take the form of both „natural“ and washed.
The „heirloom varieties” most resemble the typica variety, although there is no exact way of tracing their biological background and development. There are more than 1000 different heirloom varieties known in the wild forests of Ethiopia and the first works to separating them into specific lots are in progress. These varieties are responsible for some of the most coveted cup profiles and characterisitics in the world – bergamot, floral, citrus, cocoa, red berries and many others.
