Herly Urquia owns and manages Finca Caviflor in the Montecillos region of Honduras. This 20 hectare farm has 18 hectares planted in coffee, while the rest is planted with oranges, bananas, and Strawberries. 

Herly has approximately 38,000 incredibly healthy trees on his property, mostly all Catuai and IHCAFE 90 varieties. 

This farm is known for its abundance of wild birds; specifically a very high population of hummingbirds. It is common occurrence to see them around all the coffee and other fruits. 

Herly is in the process now of building new fermentation tanks to continue to experiment with new processing techniques. 

Yellow Honey Processing:

Honey processing originated in Costa Rica in order to use less water. This washed and natural processing hybrid produces fruity sweet cups with great texture and sugar-browning flavors. It has helped producers differentiate their coffees and appeal to consumers. For these reasons, honey processing has gained popularity throughout the coffee-growing world, especially in Central America. Small quality-focused producers in Honduras have recently started adopting the process resulting in cups that elevate the citric and nutty-washed Honduras profile with more fruit and floral flavors. Honey process color grading like red, yellow, and white honey indicates the amount of mucilage left on the seed before drying. The more fruit remaining on the seed, the darker the color of the fruit will be once dried.
